There is always something very elegant and sensual about using rose water in the kitchen. Every time I open that little bottle of perfection I feel like I´m being transported to a huge rose garden that smells amazing …. the kind of feeling I get when I am reading a really really good book. You get the feeling right? You can tell that I LOVE LOVE LOVE using rose water in my recipes it really takes a super simple recipe like this one to a whole other level.
So let me tell you a little bit about this special water that I adore… Rose water is flavored water infused with rose petals. Originally from Persia and extensively used in Greece, Rome and the Middle East rose water has been used for centuries for tons of things including cosmetically as a perfume and ointments, medically to clear eye drops, in religious ceremonies and of course in the kitchen. (my favorite).
So let´s get to the important part, the delicious protein balls I just made…. They are sooo gooood!!! It really is super simple and the success of it relies on the ingredients. I used half dates and half raisins because I wanted a little more flavor diversification and because I feel most recipes for protein balls are almost always based on dates.
They are a great option for snacking and a very balanced snack too. I added hemp seeds to have a plant based protein, toasted pecans for healthy unsaturated fats, dates and raisins for some natural sweetness and well of course rose water, cause I love it.
That being said, let´s get cooking
- ½ cup dates, unpitted
- ½ cup raisins
- 1 cup toasted pecans
- ⅓ cup hemp seeds
- ¼ cup coconut flakes + more for coating
- 1 tablespoon almond butter
- a pinch of salt
- Place pecans in a food processor until finely chopped. Add the rest of the ingredients and pulse until a uniform mass forms. Form balls and coat with coconut. Refrigerate for about 20 minutes.
